Ingredients
-
½ English Cucumber
-
½ Lemon
-
Tablespoon Olive Oil
-
½ Tablespoon Fresh Dill
Note: I have a mandolin. This was the simplest recipe yet. My motivations for having such a simple salad is that these characters originate from a place with frequent famines. So I can’t imagine anything more luxurious for a little girl than something that uses half a cucumber. A vegetable you can’t freeze well that hates cold weather. Well, I might replace this if I think up something better.
Steps:
-
Shred half cucumber into incredibly thin slices using say, a mandolin.
-
Mix lemon, olive oil and dill until emulsified.
-
Mix cucumber and dressing.
