Ingredients:

1/4th Cup Basil

2 Tablespoon Olive Oil

Pepper + Salt

1 Red Bell Pepper

2 Ounce Fresh Mozarella

1 Teaspoon Balsamic Reduction or Glaze

Italian Bread or Focaccia (preferred)

Tablespoon Butter
Notes: I used fresh basil I was growing on a plant at the time. Storebought pesto should probably be fine although as this is a relatively simple recipe, I would encourage you to get fresh products where you can. This recipe is basically a placeholder right now. The original concept involved baking focaccia bread at home but I need to move so I was unable to do baking and had to make the recipe with regular Italian bread.
Steps:

Put basil, olive oil and salt and pepper all together in a blender. Blend until smooth.

Layer bread, pesto, balsamic glaze, red pepper, mozzarella, balsamic glaze, pesto and bread.

Put nonstick pan on low medium heat, melt butter.

Cook until cheese is thoroughly melted and then flip to toast opposite side of the bread.
